Reminiscing over their favourite childhood sweets, one classic stood out - Snickers. Inspired by this beloved chocolate bar, our Chefs have reimagined this treat as an indulgent tart, layered with chewy caramel and rich peanut praline. A nostalgic favourite turned into a decadent dessert, celebrating the simple joys that bring us all together.

The original oil lamps of the Caledonian Railway are thoughtfully preserved throughout the hotel’s upper staircase, and to this day sit at arms reach - once individually lit by hand, now greet our guests with a warm glow upon each floor.

Thoughtfully inspired by the childhood stories of our talented Pastry Chefs, our newest Afternoon Tea experience weaves a tale of six nostalgic sweets from around the world.

Next up on our journey, we’re exploring the sweet stories of our ‘Coconut Candy’ and ‘Fizzy Kola Bottle’ cakes.

Created by our Pastry Chef, Freddie, the Coconut Candy is a tribute to the joy and tradition of his past. Growing up in Hong Kong, the flavours of the Coconut Candy transport him back to his childhood memories of Lunar New Year - traditionally gathering around a bowl of sweets, laughter filling the air, and the promise of a sweet year ahead. Inspired by these moments, Freddie has reimagined his favourite treat into a delicate coconut and vanilla macaron.

A contrast to the Coconut Candy, the Fizzy Cola Bottle was created by our Scottish Pastry Chef, Keirin, capturing the simple pleasures of his childhood spent at the fair - working alongside his father, the air filled with music and the scent of sweets. The sharp fizz of the cola gummies represents a taste of excitement and adventure, now weaving nostalgic joy into his desserts.

If the halls of The Caledonian could talk, they’d tell tales of love, connection, and traditions past.

Shared with us recently was the story of Charles Fraser and Isabella Goodburn, following a visit by their great-grand daughter, Johanna. Married at ‘The Caledonian Station Hotel’ in September of 1911, Charles and Isabella posed with their wedding party atop the original marble of our Grand Staircase, which can still be seen throughout the staircase to this day.

Our history lives within our stories, and it warms our hearts to play a small part in many grand love stories, both past and present.
